why no 5.1 AC3?
Adult Swim only offers 2ch AAC on their Streams.
And if you mean capping the broadcast... well idk about for Demon Slayer but I remember for Attack on Titan there was issues like the 5.1 being faked (audio copied to all channels) and the audio actually being lower quality, which was why LY decided with AoT S3 to stick with the 2ch audio at the time. Besides the fact that LostYears doesn't have anyone on the team with the ability to cap the TV broadcast either due to living elsewhere in the world, not having Adult Swim channel, or not having the hardware to do so, or all of the above.
