Just use MPC-HC if you can't be bothered to set up MPV. Comes with everything you need default.

or use smplayer, and you get a frontend for mpv. Let mpc-hc die already. Smplayer requires less setup than mpc-hc

Use Windows Media Player, extract the subs from the .mkv. Then put it in notepad and read it as you go.

MPC-HC is not hard to install at all, not is it hard to configure. Litterally just install CCCP or K-Lite (choose your flavor), and before you finish and close out of the installer, click the "Set as default VIDEO player" and you're done. What are you people, normies?
